LIGHT MOZZARELLA WITH PHYTOSTEROLS

DESCRIPTION

It is obtained by threads of acidify mass, completed with the action of specific bacterium. This light version presents a reduction in the lipid content compared to the conventional product.
This product has characteristics that make it different, is a functional cheese, with high nutritional density and low caloric intake, which provides phytosterols and antioxidants (tocopherol or Vitamin E) natural 100%. In the context of a healthy diet, these components help reduce the levels of total cholesterol and cholesterol known as "bad" (LDL), contributing to the reduction of the risk of cardiovascular disease. In addition, tocopherols act by slowing cell aging and helping to prevent or slow the oxidation of fats and other compounds in the food.

ORGANOLEPTIC DESCRIPTION

Mass: Cooked, spun, salty and fermented.
Texture: firm, elastic and closed.
Color and flavor: uniform yellowish white.
Lactic flavor, little developed.


USES

It has semi-hard, stringy consistency, so it melts nicely. Most people are familiar with mozzarella cheese since it is traditionally used on pizzas and salads. It can be used in hot preparations, because the functional compounds remain unaltered during cooking.


PURPOSE

The product is aimed at final consumers. It can be consumed by the general population from the first year of life, except those allergic to any of its ingredients. This cheese was developed to be consumed in the context of a healthy diet and lifestyle, first as being a light cheese but mainly because in a healthy context consumption helps reduce total cholesterol and LDL cholesterol, contributing to reduce the risk of suffering from cardiovascular diseases. Only 2 slices of 30 grams of this cheese provide 2.2 g of phytosterols and 6.2 mg of Vitamin E (62% of the Daily Requirement). It is a product that offers the consumer the possibility of eating healthy and rich at the same time.

Approximate weight per block: block of 0.3 kg, 2 kg and 4 kg.
Primary packaging: Thermo-shrinkable bag.
Secondary packaging: Corrugated cardboard box containing 16 blocks of 0.3 kg, 8 blocks of 2 kg, and 4 blocks of 4 kg.


STORAGE

Refrigeration temperature: Between 2 and 8ºC.
Shelf life: 180 days maintained refrigeration temperature.
Freezing temperature: Between – 18º C and – 20º C.
Shelf life: 12 months maintained freezing temperature.
